Origin and background
In his workshop in Beaucens, in the heart of the Hautes-Pyrénées, Pierre Sajous carries on the Pyrenean charcuterie tradition by working exclusively with selected French meats. His dry pork sausage is made using a traditional method, using natural casings and slow maturing in optimal conditions, in keeping with the tradition of mountain salting. This approach guarantees a product with character, true to the terroir of the South-West.
A firm, slightly grainy texture that loosens under the bite. Clean, pure flavour, with a balanced blend of creamy fat and dried meat. Precise seasoning without excessive salt or spice, allowing the quality of the raw material to express itself. The finish lingers on elegant animal notes and discreet pepper.
Suggested pairings
Enjoy as an aperitif with a variety of cold meats, farmhouse bread or walnut bread. Ideal with gherkins, beurre fermier or sweet mustard. Pairs perfectly with light, fruity red wines (Beaujolais, Côtes-du-Rhône), dry, lively white wines (Côtes de Gascogne) or even a light or amber craft beer. Also great as a rustic snack or refined outdoor snack.
