Description

Origin and Raw Materials: This hallmark of Southwest French gastronomy is prepared in the High Pyrenees. The recipe features prime meat, confit, and sausage from PDO Porc Noir de Bigorre, a native free-range Pyrenean pork breed, paired with authentic lingot beans.

Producer: Located in Beaucens, master artisan butcher Pierre Sajous is a renowned expert in Pyrenean regional delicacies. Dedicated to promoting local culinary heritage, he crafts Porc Noir de Bigorre PDO using traditional methods, guaranteeing a hearty dish free from artificial additives.

Production Process: The lingot beans are soaked and simmered in an aromatic broth. Prime cuts of confit black pork and artisanal sausage are browned and combined with the beans before being baked in the oven to form a golden crust.

Tasting Notes: This traditional cassoulet displays an appetizing golden crust. On the nose, it releases rich aromas of slow-cooked confit, savory sausage, and seasoned beans. On the palate, the beans offer a melting texture, fully infused with the rich, nutty depth of Bigorre pork fat.

Serving Advice & Aging Potential: Transfer into an ovenproof dish, sprinkle with breadcrumbs, and bake at 180 degrees Celsius for 20 to 25 minutes until golden and bubbling. Serve piping hot. Pairs exceptionally well with a full-bodied South-West red wine (Cahors) or a top oak-aged white Bordeaux. Store in a cool, dry place.

Awards & Environmental Certifications: Made with certified PDO Porc Noir de Bigorre meat, ensuring traditional free-range farming methods, high animal welfare, and full traceability.
