Origin and background
Pierre Sajous, based in Beaucens in the Hautes-Pyrénées, is renowned for his mastery of traditional recipes and the quality of his meats from French farms. His chorizo is made using a traditional method, using natural casings and a slow maturing process. Inspired by Iberian traditions but adapted to the Pyrenean terroir, it stands out for its balanced seasoning and impeccable production quality.
Suggested pairings
Perfect as an aperitif on a charcuterie board alongside cured ham, sausage and mature cheese. Goes well with lightly toasted rustic bread and pickles or olives. Ideal with fruity, spicy red wines (Côtes-du-Rhône, light Madiran), aromatic dry whites (Irouléguy, Côtes de Gascogne) or an amber craft beer.
