This authentic recipe, rediscovered in old archives dating back to 1640, is a perfect blend of duck (33-35%), pork, poultry liver, rabbit, mushrooms, eggs and a touch of Calvados, for a melt-in-the-mouth, generous and deeply flavoursome result.
