Crafted from wild berries harvested in the Corsican maquis, this Gelée de myrtes by Charles Antona delivers unique fruity and aromatic herbal notes.
Origin and Raw Materials : Produced in Sarrola-Carcopino near Ajaccio in Southern Corsica, this traditional jelly highlights wild myrtle berries, an emblematic shrub of the Island of Beauty. The formulation features pure Corsican myrtle juice (minimum 50%), pure cane sugar, glucose syrup, fruit pectin as a natural gelling agent, and a touch of lemon juice to enhance freshness.
Producer : Founded in 1991 by master artisan Charles Antona, Corsica Gastronomia has established itself as the leading producer of authentic Corsican preserves. Located in the Gravona Valley, this family-owned enterprise preserves age-old island recipes. Committed to celebrating local agriculture, Charles Antona prioritizes regional fruit sourcing and traditional copper kettle cooking techniques.
Manufacturing : Wild myrtle berries are gently pressed to extract their rich, flavorful juice. This extract is slowly simmered in copper cauldrons with cane sugar and fruit pectin to maintain a 50% fruit content. This artisanal cooking method preserves the deep ruby hue and delicate wild aromas without adding any artificial colorings, preservatives, or synthetic flavors.
Tasting : The jelly exhibits a clear, glossy deep garnet color. On the nose, it releases rich aromas of stewed dark berries paired with subtle woody and herbal undertones reminiscent of juniper and wild rosemary. On the palate, the texture feels silky and smooth, delivering a balanced sweetness followed by a refined, persistent herbal finish.
Tasting Advice & Storage : Serve at room temperature or slightly chilled. Ideal spread on toasted brioche or sourdough bread for breakfast. For gourmet savory pairings, it serves as a sophisticated match for aged sheep and goat cheeses, pan-seared foie gras, as well as roasted venison or lamb. Drink pairings include natural sweet wines such as Muscat du Cap Corse, aged Port wines, or traditional myrtle liqueurs. Store in a cool, dry place and refrigerate after opening.
Awards & Environmental Certifications : Made with a guaranteed minimum of 50% fruit content. Produced under strict HACCP food safety standards, free from preservatives, artificial colorings, and added flavors.
