Martin-Pouret's Orléans Merlot Wine Vinegar is traditionally crafted from carefully selected Merlot grapes. It is distinguished by its fruity character, delicate acidity, and remarkable depth of flavour. Produced according to the historic Orléans method, it develops an elegant complexity that enhances salads, sauces, marinades, and countless culinary creations.
This single-varietal wine vinegar is made exclusively from a selection of premium Merlot grapes. The name Merlot is believed to derive from the French word merle (blackbird), inspired by the bird's dark plumage and the deep colour of the grape. Merlot is particularly well suited to producing a refined, vibrant wine vinegar with outstanding balance, crafted in accordance with the traditional vinegar-making heritage of Orléans.
Thanks to its slow three-week fermentation in oak barrels, this vinegar develops its distinctive flavour profile—an expression of centuries-old craftsmanship. The traditional Orléans method allows the vinegar to mature naturally, creating exceptional aromatic complexity, elegance, and balance.
The city of Orléans was once home to more than 400 vinegar houses, supplying nearly 80% of France's vinegar production. Over centuries, the Orléans method became for vinegar what the Méthode Champenoise is for sparkling wine—the benchmark for artisanal excellence and uncompromising quality.
Today, only one producer continues to master this traditional production technique: Martin-Pouret. As the guardian of a unique French culinary heritage, the house preserves centuries of expertise while continuing to produce exceptional vinegars using time-honoured methods.
