Winemaker and vineyard: Coming from a traditional winemaking family, Benoît Chauveau took over part of his parents' vineyards in 1995 and those of his grandparents in 1997. He has been working with his wife Emmanuelle since 2000. In 2012, a new cellar facility was built. Since 2021, daughter Lise has been working on the estate, which covers 17 ha (14 ha in the Pouilly-Fumé appellation, 3 ha Côteaux du Giennois). Sustainable agriculture is a priority here: PDB certification will be obtained in 2020, and the first "Terra Vitis" certified harvest in 2021. Different wines are produced from the Sauvignon Blanc grape, each of which stands for and characterises its terroir. Each wine thus has its own character, which is the express aim of the winemakers.
Tasting notes: The wine has a light golden colour with shiny glints, is mineral on the nose with aromas of boxwood, acacia and white fruits. With its pleasant acidity, it is refreshing on the palate.
Service: Drink chilled with seafood, mussels, grilled fish (or fish with sauce) or white meat.
