Château Filhot 2010, Sauternes: rich and well-balanced, with aromas of honey, candied fruit and white flowers, and a lovely fresh finish.
Château Filhot 2010 embodies the nobility of the great Sauternes sweet wines. This vintage offers a fine balance between aromatic richness and freshness, in a year marked by weather conditions favourable to noble rot (Botrytis cinerea).
Tasting notes:
Colour: Deep gold with amber highlights, showing great concentration.
Nose: Intense and elegant, revealing aromas of candied fruit (apricot, mango), acacia honey, orange peel and white flowers, subtly accompanied by spicy notes and vanilla.
Palate: The attack is unctuous without being heavy, with a lovely liveliness that balances the richness of the sugar. The wine evolves with increasing complexity, with flavours of exotic fruit, quince paste and light caramel, supported by a refreshing acid backbone. The finish is long, pure and persistent.
Food and wine pairings:
This Sauternes goes beautifully with pan-fried foie gras, matured Roquefort, poultry in cream sauce or tarte Tatin. It can also be enjoyed on its own as a meditation wine.
Cellaring potential:
Already very pleasant today, this wine has excellent cellaring potential. It will evolve and gain in complexity over another 10 to 20 years.
