Champagne Ernest Remy is a producer and harvester located in the heart of the Montagne de Reims, in the Grand Cru villages of Mailly-Champagne and Verzenay. This 100% Pinot Noir comes from old vines, often over 40 years old.
Method & Ageing
- Rosé de saignée: the juice macerates for a few days with its skins to naturally extract a beautiful pinkish-red colour, without the addition of red wine.
- Extended ageing: over 36 to 48 months in cellars (chalk vaults). This long, silent ageing gives this cuvée finesse, complexity and maturity.
- Balanced dosage: around 6 g/L, to preserve freshness and precision.
Tasting
- Colour: intense ruby to garnet, with a fine, persistent mousse.
- Nose: bursting with fresh red fruit - wild strawberry, raspberry, redcurrant - complemented by a subtle floral note (violet).
- Palate: lively attack, refreshing acidity and fruity structure. Elegant berry aromas mingle with a gourmet texture and a hint of spice. Long, floral finish.
Serving suggestions
Serve chilled, between 6 and 8°C. Ideal as an aperitif, with red fruit, berry desserts, shellfish or tangy salads. Thanks to its structure and freshness, it also goes well with spicier dishes such as a light curry or grilled lamb.
