General Description
Le Marc de Bourgogne - Cuvée des Hospices de Beaune 1999 is an exceptional eau-de-vie produced by Maison Jacoulot, located in Romanèche-Thorins, Burgundy. This vintage is the result of distilling the “genne” from grapes grown at the Hospices de Beaune, a vineyard renowned for its prestigious vintages. The distillation was carried out using a mobile still, and the eau-de-vie was then matured in French oak barrels in the Maison Jacoulot cellars. This process enabled the marc to develop remarkable aromatic complexity and richness on the palate.
Aromatic profile
- Colour: Yellow with golden highlights.
- Nose: Expressive and delicious, with notes of nuts, toast and a touch of almond.
- Palate: Straightforward attack, followed by a vinified texture offering aromas of ripe, candied fruit. The palate is rather dry, providing tension and balance. Woody and spicy notes (ginger, gingerbread) envelop the fruity flavours.
- Finish: Long, with hints of tobacco and sweet spices.
Tasting and pairings
This Marc de Bourgogne is best drunk neat, at room temperature (18-20°C), in a tulip or balloon glass, to concentrate the aromas. It goes perfectly with desserts such as tarte Tatin or mature cheeses. It can also be enjoyed on its own, to savour its richness and complexity.
