Terroir: The grapes thrive on sun-drenched parcels in Saint-Georges-sur-Cher, featuring historic vineyards that have been cultivated by monks since the tenth century. The subsoil consists of sandy clay-loam layers resting upon a deep foundation of the iconic tuffeau limestone typical of the Touraine region. This unique geological formation provides steady moisture and endows the grapes with a harmonious balance between crisp freshness and dense structure.
Winemaker and vineyard: The historic Domaine de la Chaise boasts a rich heritage deeply rooted in the winemaking traditions of the Loire Valley. In the year 1899, Alexis Davault purchased a portion of the ancient Prieuré de la Chaise, which has been passionately expanded by the family ever since. Today, the 57-hectare estate is directed by Quentin representing the seventh generation managing the modern winemaking facilities.
Manufacturing: Following a meticulous harvest and complete destemming, the different grape varieties are fermented in modern, temperature-regulated stainless steel tanks. To extract delicate fruit expressions and supple tannins, a gentle skin-contact maceration is performed. The thermoregulated cellars ensure precise control throughout every stage. After being gently pressed via pneumatic systems, the blend matures for several months in the cellar to achieve seamless structural harmony.
Tasting: In the glass, the wine exhibits a brilliant, deep garnet-red color enhanced by delicate violet hints at the rim. The inviting nose reveals intense aromas of ripe blackberries, juicy blackcurrants, and red wild cherries, underscored by subtle notes of wild mint and sweet spices. On the palate, it presents itself immediately round, fleshy, and welcoming, supported by a well-integrated, velvety tannic structure. The finish is remarkably fruity, balanced, and leaves a warm, long-lasting impression.
Serving recommendation & aging potential: This characterful red wine unveils its velvety fruit profile and elegant texture when served at a moderate temperature of 14 to 16 degrees Celsius. It serves as an ideal culinary companion for savory meat stews, classic roasted duck, grilled beef, and matured French soft cheeses. The 2022 vintage is highly approachable and enjoyable in its youth but has the required balance to age gracefully in the cellar for 4 to 6 years.
Awards & environmental certifications: The estate has long been committed to sustainable and eco-friendly viticulture in the Touraine region. Every agricultural step in the vineyard is strictly supervised, and the domain holds the official Haute Valeur Environnementale certification. The consistent artisanal quality of this blend is regularly praised in leading wine publications, receiving notable commendations in the renowned Guide Hachette des Vins for its exceptional structure.
