Origin and background
Made from the cool, stony soils of the Terrasses du Larzac, this wine reflects the contrasting terroir of hot days and cool nights, which encourages the grapes to ripen slowly and fully. Domaine de Familongue's ‘L'Âme’ cuvée embodies the estate's identity, with careful blending, controlled extraction and barrel ageing aimed at complexity and finesse.
Tasting
Colour: Deep garnet red with purple highlights.
Nose: Intense and expressive. Notes of ripe black fruit (blackberry, blackcurrant), sweet spices (black pepper, liquorice), garrigue (thyme, laurel) and elegant woody touches.
Palate: Concentrated and harmonious. Full attack, fine but present tannins, balance between fruity richness (black cherry, plum), peppery spices and subtle minerality. The finish lingers on black fruit and the smoky, spicy notes of ageing.
Suggested pairings
Ideal with grilled rib of beef, roast rack of lamb with garrigue herbs or duck breast in a peppery sauce. Goes very well with simmered dishes such as Provençal stew or tagine with prunes and almonds. For cheese, try a Salers, an aged Cantal or a Bleu d'Auvergne.
