Tasting: Manakara berries are very aromatic. They have a sweet, very fruity, vegetal flavour, with notes of rosewood, slightly aniseed and peppery, which are powerful in the mouth. The light roasting of these berries brings a crunchiness close to that of cocoa nibs. It doesn't have the very resinous taste of the pink berry which can sometimes saturate the palate. It cannot be cooked, except for very mild cooking such as papillotes.

Use: With cream sauce for white meats, poultry or kidneys and it is perfectly at ease with tartars and marinated fish or shellfish as well as with fresh goat cheese. With citrus salads, chocolate desserts and simply on a sheet of chocolate of the 70% cocoa type from Tanzania.
