Domaine de Saint Siffrein - Châteauneuf-du-Pape 2020
Origin and background
The Domaine de Saint Siffrein, a family estate for several generations, is located in the north of the appellation, on soils combining rounded pebbles, sand and red clay. The vines, which are on average 50 years old, are cultivated using sustainable methods, with limited yields to encourage concentration.
Grape varieties: Grenache, Syrah, Mourvèdre, Cinsault (traditional blend)
Tasting
Colour: Deep, dense ruby with garnet highlights.
Nose: Expressive and complex. Aromas of ripe black fruit, garrigue, sweet spices, notes of leather and light tobacco with a subtle floral touch.
Palate: Full, velvety attack. Generous, silky texture, fine, enveloping tannins. Beautiful aromatic depth of jammy black fruit, liquorice, Provençal herbs and lightly smoky nuances. Long, fresh and well-balanced finish, marked by discreet minerality and fine salinity.

Suggested pairings
A superb accompaniment to a leg of lamb roasted with herbs, a Provençal stew or a duck breast with fig sauce. It also goes very well with wild boar stew, vegetables stuffed à la Provençale or a platter of mature cheeses such as Salers, Tomme de Brebis or Bleu du Vercors.
