Nose: Expressive and fruity. Aromas of red and black fruit (blackcurrant, blackberry, black cherry), floral notes (violet), sweet spices (pepper, liquorice), hints of vanilla and cedar from the ageing process.

Suggested pairings
Pairs perfectly with grilled or roasted red meats (rib steak, fillet of beef), roast lamb (leg, loin) or braised lamb, roast poultry (guinea fowl, duck) and game birds (pheasant, partridge). Also good with richly flavoured stews (boeuf bourguignon, daube provençale) and ripened hard cheeses (Comté vieux, Parmesan) or slightly blue-veined cheeses (Fourme d'Ambert, Bleu d'Auvergne).
