Winemaker and vineyard: Since the 16th century, the Crochet family has run the winery in the village of Bué, south-west of Sancerre, one of the best villages in the appellation. Jean-Marc Crochet worked with his father in the 1980s and his son Mathieu joined the estate in 2007. The estate covers 12 ha (2 ha Pinot Noir, 10 ha Sauvignon Blanc). "We try to respect nature in our work in order to produce high-quality grapes, which subsequently results in a very good wine," Mathieu Crochet summarises the philosophy of the winery, which is reflected, for example, in the winery's HVE certification. Thus, no pesticides and herbicides are used and only organic-approved products are used.

Tasting notes: The Crochet family's white Sancerre comes from the estate's various plots planted on clay and limestone soils. They give freshness and minerality that are characteristic of the Bué terroirs. It is one of the taut, very dry, mineral and straightforward Sancerre. The nose is expressive and lively with notes of broom, rhubarb and nuances of dried fruit and almonds. The attack in the mouth is round and smooth with aromas of citrus fruits and white flowers.

Service: Serve between 10 and 12° as an aperitif and with seafood, fish and goat cheese.
