Harvesting & expertise
Hand-picked from the surface of the carnations using a thousand-year-old technique known as lousse, the Fleur de sel only forms under favourable weather conditions (dry sun, easterly wind) and must be harvested quickly.
It is then gently drained and sieved, without washing, treatment or additives, to preserve its natural purity.
