Tasting Notes
Colour: Deep red with dense purple highlights.
Nose: Deep and sophisticated, combining aromas of black cherry, blackcurrant, violet, graphite and light tobacco. Hints of sweet spices, cedar, cocoa and smoke are added by the refined ageing process.
Palate: Silky, progressive attack. Remarkable, creamy texture, with tannins of rare finesse. Intense aromas of ripe black fruit, fresh herbs, sweet pepper and liquorice. Superb balance of density, freshness and exceptional length, with a saline, mineral signature on the finish.

Suggested pairings
Ideal with a thick veal chop roasted with morels, a squab stuffed with wild mushrooms or a leg of lamb roasted with rosemary and garlic confit. It is also the perfect accompaniment to fillet of beef with Perigueux sauce, duck breast glazed with honey and sweet spices or jugged hare. On a cheese platter, choose an aged Comté, a mature Salers or a blue cheese with character, such as Fourme d'Ambert.
