Origin and background

The 2016 vintage is considered exceptional in Bordeaux, with a hot, dry summer followed by a cool, long autumn, ideal for ripening the grapes. Château Olivier, steeped in the tradition of biodynamic viticulture, takes full advantage of these conditions to produce an elegant, well-balanced wine that accurately expresses the gravelly terroir of Pessac-Léognan.

Tasting

Colour: Deep garnet red with purple highlights.

Nose: Complex and intense, combining ripe black fruit (blackcurrant, blackberry), red fruit (black cherry), sweet spices (pepper, liquorice), floral notes (violet) and subtle woody touches (cedar, vanilla).

Palate: Round, silky attack. Dense and elegant texture, with fine, well-integrated tannins providing fine structure. Well-balanced mid-palate, with pure fruit and controlled acidity. Long, persistent finish, marked by delicate mineral, spicy and woody notes.

Suggested pairings

Ideal with grilled or roasted red meats (rib steak, fillet of beef), roast or stewed lamb, roast poultry (guinea fowl, duck) and richly flavoured stews. Also good with mature hard cheeses (Comté vieux, Parmesan) and slightly blue-veined cheeses (Fourme d'Ambert, Bleu d'Auvergne).
