The Colombard is one of the grape varieties nearly wiped out in the 19th century following the phylloxera outbreak. This grape is known for its fruity, smooth, rounded, and fleshy character, making it a unique choice for cognac production.
Producer: The House of Godet traces its lineage back to Bonaventure Godet, a Dutch merchant who settled in La Rochelle in the 16th century. Capitalizing on the Atlantic's strategic location, he began exporting wine and salt. To preserve the wines during transport, he started distilling them—thus, cognac was born. This innovation gained favor even in royal courts.
Now, five centuries later, the 15th-generation Godet brothers—Jean-Édouard, Maxime, and Cyril—carry forward this rich tradition. While most modern cognacs are produced primarily from Ugni Blanc, Godet has taken a distinctive approach, reviving rare grape varieties like Folle Blanche, Montils, and Colombard to create unique blends.
