Château Pichon Baron 2016
Tasting
Colour: Deep garnet red, with intense dark tints.
Nose: Complex and elegant. Aromas of ripe black fruit (blackcurrant, blackberry), black cherry, floral nuances (violet), spicy touches (black pepper, liquorice), cedar, light tobacco and graphite. Noble, perfectly integrated oak, with discreet toasty and vanilla notes.
Palate: Full, powerful attack. Impressive tannic structure but with a very fine grain, providing density and refinement. Concentrated, balanced mid-palate, revealing pure fruit and vibrant freshness. Long, precise and persistent finish, marked by mineral, spicy and graphite notes, typical of the Pauillac terroir.

Suggested pairings
An excellent accompaniment to grilled or roasted red meats (rib of beef, entrecôte, fillet of beef), roast lamb (leg of lamb, loin of lamb, confit mouse), roast duck or duck with mild spices. Also ideal with game birds (venison, wild boar) or feathers (pheasant, partridge). Perfect with richly flavoured stews (daube provençale, bœuf bourguignon) and mature hard cheeses (Comté vieux, Parmesan, vieux Cantal) or slightly blue-veined cheeses (Bleu d'Auvergne, Fourme d'Ambert).
