A colorful selection of sun-drenched vegetables preserved in oil gives the Antipasti provençaux from Le Clos de Laure their unique, rich character, true to local French Riviera tables.
Origin and Raw Materials: The medley of seasonal vegetables selected for this traditional recipe is cultivated under the Mediterranean sun in the backcountry of Nice. The recipe features premium locally grown red and yellow bell peppers, tender zucchini, baby eggplants, and firm cherry tomatoes blended with high-grade extra virgin olive oil, fresh garlic, and a selection of wild regional herbs.
Producer: The culinary house Le Clos de Laure was established in 2001 by Jean-Luc Bertin and his wife Marie-Laure. As a former pastry chef in prestigious luxury hotels along the Riviera, Jean-Luc Bertin infuses the brand with an uncompromising rigor, exactness, and taste structure that defines their gourmet creations, now crafted alongside their son Jérôme. While welcoming food lovers in their elegant shop located on Rue Verdi in Nice, they protect the pure gastronomic heritage of their land.
Production: The preparation is meticulously carried out at the family facility in Drap. Each vegetable variety is prepared separately, cut into uniform pieces, and gently cooked or blanched to lock in its individual natural sugars and distinctive firmness. The tender pieces are then carefully hand-packed together into glass jars with whole garlic cloves and wild herbs before being covered entirely with premium olive oil, without any artificial stabilizers.
Tasting: This small-batch creation shows an appealing, vibrant mosaic of crimson reds, bright yellows, and deep purples submerged in a clear, golden-green olive oil. The mouthfeel is remarkably tender yet fleshy, presenting a satisfying and juicy bite that highlights its non-industrial nature. On the nose, complex aromas of slow-cooked summer vegetables dominate, rounded by clean olive notes and a aromatic thyme perfume. The first taste delivers a balanced, sun-drenched sweetness, followed by an elegant herbal finish.
Tasting Advice & Keeping Potential: Serve these premium vegetables at room temperature around 18 to 22 degrees Celsius. Generally speaking, they are highly versatile for creating sophisticated cocktail appetizers, dressing cold pasta dishes, or accompanying gourmet deli platters. More specifically, they will perfectly complement a selection of dry-cured ham, a homemade rosemary focaccia, or a grilled beef tenderloin. It pairs magnificently with a structured dry Bordeaux Blanc or a prestigious Pessac-Léognan selection available at lavinothequelaroche.com. Once opened, keep the surface covered with oil, store in the refrigerator, and consume within 14 days.
Awards & Environmental Certifications: Prepared in a fully certified HACCP facility, this artisanal recipe is strictly GMO-free. The producer focuses on clean agricultural methods by maintaining exclusive short supply chains with small-scale local farms along the French Riviera.
