Small, elegant and lasting bubbles, flowery and fruity nose with notes of ripe apricots and mirabelles, a lively and refreshing attack with subtle hints of peach. In the mouth it is ample and rich with a lingering racy and refreshing taste.
Tasting: This "male" Crémant is elaborated by Paul Bott, of the 7th generation of wine-makers in the family, with 100% Pinot auxerrois. It prevents freshness and a pleasant intensity. The aromas remind one of butter, sweet rolls, almonds, and apple, with a smoky character. The bubbles are fine and elegant.
Winemaker and winery: Philippe-Louis Bott began producing wine in 1835. His wines quickly gained a reputation – including in the USA (gold medal in Chicago in 1893). The long-established estate, run by Paul and Gladys, comprises 26 hectares of vineyards.
Service: To serve as aperitif, with thin slices of ham, dry Parmiggiano or green oysters.
