Tasting Notes

Colour: Deep red with dark garnet highlights.

Nose: Remarkably complex: blackberry, blackcurrant, black plum, underlined by light tobacco, cedar, cigar box and sweet spices. Earthy, smoky and slightly floral (violet) nuances enrich the whole.

Palate: Concentrated but suave attack. Sumptuous texture, dense and silky, with ultra-fine tannins and great depth. Intense flavours of jammy black fruit, liquorice, graphite and dark chocolate. Very long finish, both creamy and taut, with a lingering mineral and spice sheen.

Suggested pairings

Ideal with roast rack of lamb with fresh herbs, fillet of beef with Perigueux sauce, or duck breast with green pepper. It also goes wonderfully with game in grand veneur sauce, grilled mature rib of beef or jugged hare. For a cheese platter, opt for a Salers, an aged Comté or a mature Brie de Meaux. For a more daring match, a black truffle risotto or fresh tagliatelle with porcini mushrooms and parmesan can also enhance its depth.
