Origin and Raw Materials: This white pepper originates from the tropical island of Phu Quoc, located in the Gulf of Thailand in southern Vietnam. Piper nigrum berries are cultivated here on red volcanic soils swept by sea breezes. The fruits are hand-harvested at full maturity when turning a bright red color, ensuring a dense grain packed with essential oils.
Producer: Founded by Karine Blanc, Sarabar meticulously sources exceptional peppers and rare spices worldwide. Committed to traditional methods, Karine Blanc maintains direct relationships with island farming families. Each batch is inspected and packaged in France to preserve the vibrant aromatic profile of the berries.
Production Process: To obtain white pepper, fresh red berries are soaked in fresh water to soften the outer pericarp. The skin is then removed by gentle washing before the pepper kernels are sun-dried on bamboo racks. This natural process reveals the grain's ivory color without generating bitterness or harsh notes.
Tasting Notes: The grains display a uniform ivory hue and a smooth surface. On the nose, this pepper reveals a highly refined bouquet combining fresh herbal aromas, citrus, forest floor, and a subtle ocean touch. On the palate, the entry is clean, velvety, and remarkably fresh, leaving a controlled heat and an elegant lingering finish.
Serving Advice & Aging Potential: Grind fresh just before serving over fine fish, scallops, poultry in cream sauce, seared squid, or summer vegetable soups. It also elevates fresh goat cheese or sautéed exotic fruits served between 16 and 18 degrees Celsius. Store in a cool, dry place away from light and heat in its airtight container.
