Origin and Raw Materials: This black pepper originates from the State of Sarawak, located in northern Borneo, Malaysia. Cultivated in hilly soils under a humid tropical climate, the Piper nigrum berries are harvested by hand when reaching green maturity before starting their natural sun-drying process. The berries selected by Sarabar come from traditional crops ensuring a dense grain rich in essential oils.

Production Process: Following manual harvesting, the fresh berries are washed in pure water and spread in the sun for 4 to 5 days to dry naturally. During this dehydration process, the outer skin wrinkles and turns its characteristic deep black color. The grains are then carefully sorted and graded to eliminate any impurities before being sealed in airtight bottles to lock in aroma.
Tasting Notes: The grains feature a deep black hue with a finely wrinkled surface. On the nose, the pepper offers a fresh, complex bouquet blending aromas of cedarwood, pine resin, and fresh fruit. On the palate, the heat unfolds smoothly without harshness, making way for a remarkable aromatic length marked by woody, fruity, and slightly resinous undertones.
Serving Advice & Aging Potential: Grind fresh just before serving over grilled red meats, duck breast, pan-seared fish, or scallop carpaccio.
