Origin and Raw Materials: This white pepper originates from the famous Malabar Coast in Kerala State, southwestern India, the historical birthplace of Piper nigrum. The berries are hand-harvested at full ripeness when turning a bright red hue. Lush tropical soils and mineral-rich volcanic terroirs provide the grain with exceptional density and aromatic concentration.
Producer: Founded by Karine Blanc, Sarabar meticulously sources exceptional peppers and rare spices worldwide. Committed to preserving ancient agricultural knowledge, Karine Blanc works directly with Indian smallholder farmer cooperatives. Each batch is inspected and packaged in France to guarantee absolute fresh berry purity.
Production Process: To obtain white pepper, fresh red berries are soaked in spring water tanks to soften the pericarp. The outer skin is then removed by gentle washing before the inner core is slowly sun-dried. This traditional artisanal method preserves the velvety smoothness of the pepper without developing harsh bitterness.
Tasting Notes: The grains display a warm ivory color and a uniform surface. On the nose, this pepper reveals an elegant bouquet with notes of dried grass, damp forest floor, nutmeg, and sweet spices. On the palate, the entry is smooth, velvety, and warm, delivering controlled heat and lingering woody undertones.
Serving Advice & Aging Potential: Grind fresh just before serving over fine fish, poultry in cream sauce, scallops, root vegetable purées, or mousselines. It also pairs wonderfully with fresh goat's milk cheese served between 16 and 18 degrees Celsius. Store in a cool, dry place away from light and heat in its airtight container.
