Description

Origin and Raw Materials: This aromatic berry (Zanthoxylum armatum) grows wild along the Himalayan foothills in southern Nepal. Hand-harvested by local communities in protected hilly regions over 2,000 meters above sea level, the berry is picked at full maturity when its outer husk opens. Only the outer pericarp, naturally rich in essential oils, is retained.

Producer: Founded by Karine Blanc, Sarabar meticulously sources exceptional peppers and rare spices worldwide. Working directly with Nepalese foraging communities, Karine Blanc supports fair and sustainable wild harvesting. Each batch is inspected and packaged in France to preserve the brilliant aromatic profile of this rare spice.

Production Process: Following manual harvesting, fresh berries are spread in the sun to dry naturally over several days. This gentle drying process concentrates intense citrus aromas within the husk. The berries are then meticulously cleaned and sorted to separate the hard black inner seeds, keeping only the highly aromatic outer husk.

Tasting Notes: The berries appear as small open husks ranging from dark brown to reddish brown. On the nose, Timut pepper offers a striking, refreshing bouquet marked by intense notes of pink grapefruit, passion fruit, and fresh citrus. On the palate, it provides a tingling sensation followed by long-lasting fruity freshness.

Serving Advice & Aging Potential: Crush coarsely in a mortar or grind fresh just before serving over grilled fish, scallop ceviche, tuna tartare, seared poultry, or roasted summer vegetables. It also performs magically over dark chocolate desserts, exotic fruit salads, or fruit sorbets served between 16 and 18 degrees Celsius. Store in a cool, dry place away from light and heat in its airtight container.
