Terroir: The grapes thrive on carefully selected parcels within the Pouilly-Fumé appellation, featuring vines with an average age of 25 years. The subsoil consists of compact Kimmeridgian marl, interspersed with fine layers of clay rich in flint. This distinct geological profile forces the roots to dig deep, imprinting the wine with its signature smoky, vibrant mineral tension.
Winemaker and vineyard: Benoît Chauveau manages this historic family estate located at the very heart of the prestigious Pouilly-Fumé appellation along the Loire. Having taken over a section of his parents' vines in 1995 and integrating his grandparents' vineyards in 1997, he directs the domain with artisanal dedication. Together with his wife Emmanuelle, he built a state-of-the-art cellar facility in 2012, and daughter Lise joined the winemaking team in 2021.
Manufacturing: Following a rigorous selection during harvest, the grapes are immediately subjected to a gentle pressing in a modern pneumatic press. The resulting must undergoes cold static settling at a controlled temperature of 15 degrees Celsius for 24 hours. Alcoholic fermentation is carried out in stainless steel tanks under strict temperature controls below 18 degrees Celsius. Subsequently, the wine is aged on its fine lees for 6 to 8 months to build texture and complexity.
Tasting: In the glass, the wine displays a brilliant pale gold color enhanced by subtle greenish glints. The powerful nose reveals a bouquet of ripe citrus fruits, crisp gooseberry, white peach, and fine notes of freshly cut grass. On the palate, it proves beautifully linear, dense, and structured, showcasing a vibrant, perfectly integrated acidity. The long finish is driven by a striking salty flint minerality and delicate nuances of brioche.
Serving recommendation & aging potential: This dry white wine unveils its full aromatic complexity when served at an ideal temperature of 10 to 12 degrees Celsius. It serves as an outstanding culinary match for grilled premium fish, seared sea scallops, fine poultry in creamy sauces, and matured goat cheeses. The 2025 vintage offers great immediate pleasure in its youth but has the structure to cellar beautifully for 4 to 6 years.
Awards & environmental certifications: The estate implements strict sustainable farming practices across all vineyards and holds the official Haute Valeur Environnementale certification. Furthermore, the domain is verified by the Terra Vitis association for eco-friendly viticulture. The exceptional quality of this cuvée is regularly recognized in international competitions, such as the Decanter World Wine Awards, earning silver medals and scores above 90 points.
