Description

Origin and Raw Materials: The field-ripened tomatoes selected for this traditional recipe are cultivated under the Mediterranean sun in the backcountry of Nice. The preparation features a high-grade extra virgin olive oil combined with a classic blend of regional herbs, garlic, and sea salt.

Producer: The artisanal house Le Clos de Laure was established in 2001 by Jean-Luc Bertin and his wife Marie-Laure. As a former pastry chef in prestigious luxury hotels along the Riviera, Jean-Luc Bertin infuses the brand with an uncompromising rigor, exactness, and taste structure that defines their gourmet creations, now crafted alongside their son Jérôme. While welcoming food lovers in their elegant shop located on Rue Verdi in Nice, they work strictly with fresh, local ingredients.

Production: Harvested at peak maturity during the summer, the tomatoes are halved and slowly sun-dried to concentrate their natural sugars. They are then carefully hand-packed into glass jars at the family workshop in Drap, covered entirely with premium olive oil, and left to marinate with whole garlic cloves and wild herbs until the flavors reach a perfect balance.

Tasting: These marinated tomatoes display a rich, deep crimson color submerged in a clear, golden-green olive oil. The texture is remarkably fleshy, tender, and succulent, avoiding any excessive chewiness. On the nose, a powerful aroma of concentrated tomato sweetness, aromatic thyme, and rosemary immediately arises. The palate enjoys a complex contrast where the intense, savory-sweet profile of the fruit blends beautifully with the smooth roundness of the oil.

Tasting Advice & Keeping Potential: Serve these sun-dried tomatoes at room temperature around 18 to 22 degrees Celsius. Generally speaking, they are perfect for Mediterranean appetizers, elevating fresh green salads, or tossing into gourmet pasta. More specifically, they will perfectly complement a homemade rosemary focaccia, a beef carpaccio with wild arugula, or top a baked mozzarella chicken breast. They pair magnificently with a crisp, chilled Provence rosé or a white selection from the Loire Valley available at lavinothequelaroche.com. Once opened, keep submerged in oil, store in the refrigerator, and consume within 14 days.

Awards & Environmental Certifications: Prepared in a fully certified HACCP facility, this artisanal recipe is strictly GMO-free. The producer focuses on eco-friendly practices by maintaining exclusive short supply chains with small-scale local farms along the French Riviera.
