Suggested pairings

This vintage is an ideal accompaniment to roast rack of lamb with Provençal herbs, roast beef in a crust, or shoulder of lamb confit. It also goes very well with duck breast with cherries or guinea fowl supreme with morel mushrooms. On a cheese platter, opt for mature tommes or a Salers. It also goes well with simmered dishes such as navarin lamb or wild boar stew.
