Winemaker and Vineyard: Château Pavie is a 37-hectare vineyard property situated on an exceptional terroir with an equally exceptional southern exposure. The entire estate can be subdivided into three easily identifiable terroirs: the limestone plateau, the slope, and the foothills, all at different elevations above the Dordogne River. The conditions are extremely favorable for viticulture, including poor soil, excellent sunlight, and natural drainage.

Tasting: The 2013 Pavie was actually quite reticent on the nose compared to the 2013 Bellevue Mondotte, gently unfolding with mulberry, forest floor and wild mint aromas. The palate is medium-bodied with supple tannin, gently gripping the mouth with a touch of chalkiness underneath the caressing finish. There is a little chewiness here and as I suspected, it might actually be the Pavie-Decesse that is the best wine within Gérard Perse's portfolio. (robertparker.com, 10.28.2016)

Service: Serve at room temperature (16-18°C) to accompany duck shepherd's pie
