Great Burgundy, powerful, versatile; with fish dishes.
Winemaker and winery: Domaine Fichet, which today has 30 hectares of vineyards, has undergone an enormous period of growth in recent decades; there were also some innovations at the level of wine-press technology in 2006. Olivier Fichet is an innovative winemaker who produces wonderful, fresh wines. The grapes grown here are Chardonnay, Pinot Noir, Gamay and Aligoté. This cuvée comes from the vines planted in Chardonnay on the climate "La Cra" where a selection was made in the most imposing slopes that were planted successively in 2000, 2016 and 2018. Historically, La Cra existed only on a chalky limestone plateau. The slopes are inclined by 35 to 45%, which implies manual work throughout the year, as the machines cannot access them. Facing south-west and due south, poor and stony soil, very ripe grapes are harvested by hand in small cases. Small yield and very limited quantity.
Tasting: The very ripe Chardonnay comes into its own here. Great minerality and power!
