Bagna cauda is a sauce with candied garlic and anchovies that is traditionally eaten hot or warm with raw vegetables. This Niçoise-style "fondue" is excellent in summer as an aperitif with a nice basket of fresh, crunchy vegetables that you dip. Purple artichokes, mushrooms, celery, carrots, broccoli, courgette de Nice, cucumber... You can also spread it on toast as an appetizer.
